Homemade Tomato Soup

Tomato soup is the ultimate comfort food. Elevate this comforting classic with tarragon and anchovy paste for a gourmet upgrade to this comforting staple.

INGREDIENTS
2 cups homemade tomato sauce (see recipe)
3 tablespoons extra virgin olive oil
1 tablespoon anchovy paste
I tablespoon minced garlic
1 tablespoon minced shallot
2 tablespoons chopped tarragon
1/2 teaspoon kosher salt
1/4 teaspoon freshly cracked black pepper

INSTRUCTIONS
Wash and strip tarragon leaves from the stem. Finely chop the tarragon, garlic, and shallot. Set aside.

Add olive oil to a medium saucepot and place it onto the stove over medium heat. Add the garlic, shallot, tarragon, anchovy paste, salt, and pepper to the oil and cook for 10 minutes, or until the anchovy paste has dissolved and the garlic and shallots have softened.

Add homemade tomato sauce to the pot, reduce the heat to low simmer the soup for 15 minutes.

Serve hot or cold and enjoy!
